Torah (Hebrew: תורה) is a Hebrew word that means "instructions". When most people say the word Torah they are either referring to the whole Jewish Bible, the Tanakh, the first 5 books of the bible or all of the Jewish teaching in general.
These five books are the beginning of both the Jewish and Christian bibles.
The five books are:
Genesis (Hebrew: Bereishit, בראשית),
Exodus (Hebrew: Shemot, שמות),
Leviticus (Hebrew: Vayikra, ויקרא),
Numbers (Hebrew: Bemidbar, במדבר) and
Deuteronomy (Hebrew: Devarim, דברים).

Simchat Torah or Simhat Torah (Ashkenazi: Simchas Torah, Hebrew: שִׂמְחַת תּוֹרָה, lit., "Rejoicing of/[with the] Torah") is a Jewish holiday that celebrates and marks the conclusion of the annual cycle of public Torah readings, and the beginning of a new cycle. Simchat Torah is a component of the Biblical Jewish holiday of Shemini Atzeret ("Eighth Day of Assembly"), which follows immediately after the festival of Sukkot in the month of Tishrei.
